Course Offerings

 

501 – Introduction to Food Preparation – 1/2 credit – 1/2 year This course deals with the study of individual foods, their use in meals, their nutritional value, and how to select and store them. The principles of cookery and methods of food preparation are studied.

502 – International Food Arts – 1/2 credit – 1/2 year
Prerequisite: Introduction to Food Preparation
In International Foods, students will explore the enchanting world of new and exotic dishes, preparing foods
from France, Italy, China, Japan, and Mexico. Along with the laboratory, students will gain a better
understanding of a country’s food choices and preparation techniques through demonstration, guest speakers,
and class discussion.

513 – Culinary Arts – 1/2 credit – 1/2 year
Prerequisite: Introduction to Food Preparation and permission of the instructor
This course consists of planning and preparing meals that are nutritional and balanced, as well as attractive and
varied. There is an emphasis on quantity cooking and food service. The students will prepare and serve meals
for paying guests. A study of career opportunities in food service is also included.


Textile Arts classroom506 – Textile Arts I – 1/2 credit – 1/2 year
This course deals with fashion trends and the psychology of clothing. The history of fashion, clothing and
fabrics will be explored. Students will learn fabric care, machine sewing, quilting, and basic garment
construction.

507 - Textile Arts II – 1/2 credit – 1/2 year
Prerequisite: Textile Arts I
This course deals with advanced clothing construction and sewing techniques. Students will learn the process
of fibers becoming fabrics. Students will plan a cost effective, stylish wardrobe. Careers related to fashion will
be explored.

508 – Textile Arts III – 1/2 credit – 1/2 year
Prerequisite: Textile Arts II
This course deals with the use of textiles in the home. Students will identify housing needs and influences on
choosing a home. The elements and principles of design will be applied in designing an interior space.
Students will construct textile products for bedrooms to create a theme. The role of lighting, windows, and
furniture and home accessory styles will be studies.

509 – Textile Arts IV – 1/2 credit – 1/2 year
Prerequisite: Textile Arts III
This course deals with the construction of a home including reading and designing floor plans. Students will
create interior and exterior spaces of homes and construct advanced textile products for the areas. Students will
learn what it takes to maintain a home and select systems and appliances. Careers related to interior design will
be explored.

503 – Teen Health Issues – ½ credit – ½ year Grades 9
The major experiences of life before and after graduation are explored. Value systems will be explored for the
purpose of self- identity and to be used as a means of choosing an individual life
Style. Problems as they affect the individual and/or family will be covered. These include topics such as
alcoholism, other health related issues, death and dying, coping skills and decision- making.

504 – The Art of Teen Issues – 1/2 credit – 1/2 year Grades 11, 12
The major experiences of life before and after graduation are explored. Value systems will be explored for the
purpose of self- identity and to be used as a means of choosing an individual life style. Problems as they affect
the individual and/or family will be covered. These include topics such as alcoholism, other health related
issues, death and dying, coping skills and decision-making.

505 – Early Childhood Education – 1 credit – 1 year Grades 11, 12
This course starts with the principles of development and how they are integrated to
incorporate the physical, motor, and speech aspects with the emotional, social, and moral adjustments in order
to study the child as a total individual being. Students will be conducting a preschool and teaching at the local kindergartens. 
Upon enrollment in Tech Prep and successful completion of the course with a 73 or better the student will
receive college credit from Manchester Community College. Principles of early childhood education will be
emphasized. Students will be involved with an actual nursery school program during the second semester. They
will also have experiences teaching lessons outside of the high school setting.

511 – 512 – Culinary Arts Intern I & II – 1/2 credit – 1/2 year
Prerequisite: Culinary Arts and permission of the instructor
This course is for students with a strong interest in Food Service as a career. Students will participate in a food
service operation at least once a week. Students will also assist the Culinary Arts instructor with demonstrations
and preparing for luncheons. Course may be repeated a second year for another 1/2 credit. Restaurant planning
is emphasized the second year. Membership and competitions in FCCLA (Family, Career and Community
Leaders of America) is required.

515 - Parenting and the Family – 1 credit – 1 year
This course covers whom and why to get married. Weddings will be planned and a simulated wedding will take
place. Students will learn how to communicate in a family and will learn the life cycle from conception to age
two. The role of parenting and parenting styles will also be explored. This course is a prerequisite to the
Early Childhood Education class..

 

510 - Baking and Pastry Arts – 1 credit – 1 year – open to 10 – 12 grades
Industry based baking and pastry items will be covered. The use of scales and other industrial equipment will
be explored. The items covered include, quick breads, cookies, pies, cakes, breads, desserts and other fancy
items. Products baked will be marketed also for sale, so some business skills will also be learned. Baking
careers and specialties will also be explored.
